Today, I visited “Ito Ginzaten” which was selected as Bib gourmand in Michelin Tokyo 2015. It was located around 4 minutes walk from Ginza station. I arrived there at 10:53, 7 minutes before its opening time. I could enter the shop at opening. It seemed it would be easy to enter the shop in Ginza without waiting if it was opening at 11 o’clock.
I bought a ticket of Niku(meat)soba chuu(middle size)(¥850) and the ramen came in 4~5 minutes.
Toppings were welsh onion and 4 slices of roasted pork fillet. Quite simple!!
Noodle was straight and firm. Probably the most firm noodle I have had. Soup had strong taste of small dried sardine. You could enjoy not only rich taste but also bitterness of small dried sardine. If you would like something like cuttlefish pickled in salt, you must love it.
Slices of roasted pork fillet were thick, chewy and reasonably fatty. Delicious!
Each of firm noodle, soup(with strong taste of small dried sardine) and roasted pork fillet insisted itself but the ramen in total gave gentle harmony.
